
Apple, Pear or Peach Frangipane Crust
Ingredients
Dry:
- 4 cup flour
- 8 teaspoon sugar
- 2 teaspoon salt
- 4 sticks + 4 tablespoon frozen butter, cut into small peices
Wet:
- 4 egg yolks
- 1⁄2 cup milk
Instructions
- combine dry ingredients in stand mixer; add frozen butter and mix until crumbly;
- combine wet ingredients in a separate bowl; add to stand mixer and mix just until dough comes together;
- divide into 4 equal portions (we weigh entire dough ball on scale and divide by 4), press into disks; wrap with plastic and store in refrigerator until ready to roll.
